Bananas and Onions and Beets, Oh My!

We joined the local organic food co-op. While I still get most of my produce from the non-organic roadside market and the grocery store, now each week I’ll be picking up a basketful of organic produce as well.

This week’s goodies include organic bananas, beets, onions, sweet potatoes and more. I don’t think I’ve ever eaten beets outside of Ukraine. It’s weird to have experiences I associate with Ukraine within an American context.

Right now I have a onion frittata in the oven, with a side salad ready for dinner.

That is so cool! Just yesterday I made the arrangements to become a part of an organic produce co-op. The bananas and onions I can deal with- the beets, not so much. What’s that soup of Eastern European origin that is beet-based? The one that is bright fuscia?

Borchsh. Depending on how you want to spell it.

Have I ever made borchsh? No. In my time in Ukraine, I learned to make it, but never made it myself. It was something that was identified so strongly with Babushka Katya, that I just couldn’t do it.

Mmmm…That frittata sounds delicious!

I made borcsh once. If I remember correctly, it took a fair amount of time to make, but it was very yummy. I had eaten one bowl of it and put it in the fridge for leftovers. The next day, in the process of pulling it out of the fridge, I spilled the whole pan. All of it. It was very sad. I haven’t had the heart to try again since.

i have a fab recipe for roasted veggie salad, you can use all your organic veggies: onions, beets (we call it beetroot!), sweet potatoes, capsicum (transl. bell pepper i think), mushrooms, courgettes (zucchini), garlic… whatever you have/love.. just chop it all up and roast in oven, drizzled with olive oil, mod heat for 45 mins, add a cup of cooked couscous or bulghur wheat, and make a dressing from olive oil, red wine vinegar and a wee spoon of curry powder. toss gently together and serve while still warm.. oh my gosh its divine (oh i do have such a battle with my waistline!!)

We have a cute little health food store right down the street that is offering some kind of organic summer vegetable buying club. I haven’t checked into it (yet) because if you walk just one more block down the street there is a Farmer’s Market every Saturday morning and we have always walked the girls (our two dogs) downtown on Saturday mornings. They think all the vendors set up shop just so they can come and visit!

I think I’ll give them a call and find out how the club works.

I LOVED my organic co-op that we did about a year ago! This year, my next door neighbor, who has a hugs organic garden, has helped us plant an organic garden, so we’ll see how that goes! I hope to supplement with stuff from the farmer’s market, which isn’t all organic, but at least it hasn’t been on a truck for weeks! I hope you enjoy the many different veggies you’ll get! I actually learned to cook greens for the first time when we did that, among other things.

Does that save you money over buying veggies from the grocery store? That roasted veggie dish sounds quite delicious. I’ll have to try it out once the farmers around here start harvesting their veggies.

Hey there—borcht sounds delicious…and the best was with ya’ll in ukraine that katya made. i remember that the beets were just an ingredient, not the whole soup, and that it was much more delicate than i had had here in the states once. when we were in florida for thanksgiving, in spite of the lovely repast, T whispered to me that he just loved borcht, the kind babuska made….it was so sweet and winsome,,,,made me want to whist him there on my magic carpet.mk

i am so tempted to join the csa but its 550 for 13 weeks, and we hopefully will grow most of the same things in our little yard. my beets all died. too warm in the house, they need to be started outside.

Ahhh… I remember the roadside markets in FL and I miss them. They are only available here during the summer months. I wish I could find an organic produce co-op… that would be a lovely thing ;) .
