Other than Hubby’s forays into the kitchen, our meals have gotten into a bit of a rut.  I went to the produce market and bulk store today, browsed the supermarket flyer for sales, and am trying to do some meal planning for this week.

Breakfasts
Oatmeal
Pancakes
Scrambled Eggs
Fruit and Yogurt
Seven Year Granola
Zucchini Bread Muffins

Lunches
Pasta
Baked Potatoes
Tuna Sandwiches
English Muffin Egg Sandwiches
PB&J (not totally abandoning our comfortable rut!)

Dinners
1.  Picnic at Pops in the Park
Sub Sandwiches, Potato Salad, Deviled Eggs, Grapes, Carrot Sticks, Brownies
2. Roast, Mashed Potatoes and Sauteed Veggies
3. Grilled Fish Chicken, Five-Minute Cabbage
4. Cuban Black Bean Soup
5. Asian Chicken Salad
6. Mediterranean Artichoke/Chicken Salad Chicken Mole
7. Chicken Fajitas, Refried Black Beans, Diced Avocado

Snacks
Popcorn
Bananas
Strawberries
Baked Potatoes
Cottage Cheese
Veggies Dipped in Hummus

Other
Strawberry Jam (Planning on making Saturday, if the kids haven’t finished eating the flat of strawberries I bought today. And if the weather doesn’t get too hot. I refuse to put the AC on in March.)

You inspire me to get out of the rut my meal planning has gotten into. Having years ago cut out casseroles loaded with soups and creamy cheese sauces, I’ve hit a brick wall when it comes to tasty, healthy meals. No inspiration. Cooking healthy can be expensive.

It’s a great idea to plan out lunches and snacks. When I forget to do that we either eat lots of junk or spending too much money on FF or snacks.

Gail, thankfully food prices seem to have dipped a bit, with gas prices. I don’t know whether it is too far a drive for you, but we usually get our produce at Fruitville Grove Market. While they have some local and organic produce, they also get stuff from the big market in Tampa (like Publix). But, it’s usually less expensive and easy to get lots of fruits and veggies for the family.

Annie, cabbage is 19 cents a pound here, it’s healthy and the kids don’t hate it. But, it can get pretty boring, so I’ve been looking for more (easy) cabbage recipes. Btw, before bed last night the boys and I were watching y’all play and sing. *grin*

Ellie, with my boys being older, they can cook and get snacks for themselves a lot. Unfortunately, the “easy” snacks are usually the less healthy ones. They do a good job, in general, of making good food choices. I’ve found that if I make lists of snack ideas, though, that they eat more of the healthy things and I don’t have a bunch of uneaten, forgotten, gross produce in the fridge at the end of the week.

Thank you for the link to my Chicken Mole recipe! That is a favorite in our home and it always leaves lots of leftovers.

I like your strategy for getting out of a cooking rut!
