California Flan
We did have enchiladas for dinner before Bible study tonight. Yum. *grin* My favorite dessert when we have a group over for Tex-Mex is California Flan. I usually double this recipe, and add an extra egg or two because it is so sweet.
California FlanIngredients :
3/4 cup Sugar
4 x Eggs
14 oz Sweetened condensed milk
1 cup Water
2 tsp VanillaMethod :
* Place sugar in skillet and cook, stirring, over moderate heat until melted and golden brown. Pour into 1-quart casserole and swirl to coat sides and bottom evenly with caramel. Beat eggs. Add milk and beat until blended.* Beat in water and vanilla. Turn into prepared baking dish and place in pan containing 1 inch hot water. Bake at 325F 1 hour 40 minutes, or until knife inserted in center comes out clean. Cool completely, then turn out on serving plate. Serves 6 to 8

Flan can be heavenly when done well. For some reason, it's the one dessert you can count on finding on every island in the Caribbean (Jamaica being the sole exception in my experience). On dive trips we'd often keep a running rating system on the quality of the flan in every restaurant we tried.
But, it's interesting...for some reason, we never eat it at our local Tex-Mex restaurants. Your post may prompt me to alter that habit.

Well, for a flan enthusiast such as yourself, this recipe may leave something to be desired. Most of the recipes I found call for a two+ day preparation, and this is a quick and easy recipe.
The best Mexican restaurant we ate at in your dusty Texas town, we went to with friends the last weekend we lived there. I was so disappointed not to have found it sooner.
Tex-Mex is one of the things I miss the most here.

Oh, yeah...I can imagine how you'd miss it! Just say the word, and I'll ship you some salsa. Don't know what you'd put in on, but I'll bet you could figure something out!

Make sure to remind me next time I'm heading to Kyiv and I'll stop off at the local Tex-Mex place (run by a couple buddies of mine) and I'll pick up a couple dozen tortillas - I'm pretty sure their tortilla-making machine is the only one east of the Oder - and a gallon or two of salsa.

Woohoo! *grin* I'll definitely take you up on that offer. And, when I really crave tortillas, I can make flour ones okay (very time consuming, though.) But I can't make corn tortillas at all--so if you bring those, you'll be doubly thanked!
We'll have you over for Tex-Mex and Pina Coladas, okay? And my secret recipe for that includes ingredients you can't get in the States. *eg*
