Not-Quite-Vegan Lunch

I thought of VeganMomma as I made lunch today--sliced portabella mushrooms sauteed in olive oil with a sprinkling of mtnmama's special seasonings, on bread with a little mayo. (Okay, so lunch wasn't completely vegan. . .) On the side I served a field greens salad with flax seeds and olive oil and vinegar dressing.

It looked very appetizing, and I wanted to take a photo to share here, as VeganMomma does with her recipes. But, the camera was in the car and the family was hungry. . . Another time.

That sounds delicious. When I do not add the ingredients in my blog that means I did not pay attention as I prepared the dish, lol. I rarely follow a recipe but I have gotten better since I started blogging about what I prepare.

I think I will have to guess at the portions for the bean dish. ;-)

Yummm. I love Portabella mushrooms, too.

Vegsource has a recipe for tofu mayo if ever want to go all vegan. We're not vegan, but I have a child allergic to eggs, so we use that one often.=)

Have you read much about raw food? I just bought a book called "rejeuvinate your life" by Serene Allison on all raw foods - which I don't think would be totally possible for my family, but it has been really fun incorporating as much raw as possible. I was completely amazed at the creative ways Serene makes dishes and full meals. Very interesting stuff. Have you tried sprouting? Apparently, sprouting grains and legumes for 2-3 days dramatically increases the nutrients and enzymes. I made Serene's sprouted hummus and my hunter hubby loved it.
